Salsa Chicken

Easy to make. Easy to clean up. Good for you. Delicious. What more could you ask for?

This recipe for Salsa Chicken was adapted from A Bicycle Built for Two It's a "must make!"



Salsa Chicken

Ingredients:

1 lb boneless, skinless chicken breast
1 can kidney beans, drained
1 green pepper
1/2 large onion
1 cup salsa* (any kind)

*I used hot salsa, but you can use any kind according to your lil taste buds!

Slice chicken, pepper, and onion into thin strips.

Boil chicken for 5-10 minutes or until done.

In a large pan, saute peppers and onions until tender.

Drain chicken and add it to peppers and onions. Add the beans and salsa. Mix well until everything is coated with beans and salsa.

Serve over brown rice.
